Up to 12 students can participate in classes in the bakery at one time, with two peer mentors available for support. The inmates receive a Level 2 City and Guilds baking qualification upon completion of their training. The qualification is recognized by most potential employers and can be a huge help in obtaining work upon release.

The inmates learn to bake a variety of goods from scratch, including bread, sponge cake, and even wedding cakes. Their famous sourdough bread is a hit with local cafes and restaurants. In addition to teaching valuable skills, the bakery gives the inmates a sense of pride and accomplishment. It also lifts their spirits, as many of the inmates look forward to their time in the kitchen.

Anthony Kelly was struggling through a life of crime and drug use. At 34 years old, Kelly had spent 16 years doing time on and off in numerous prisons.

Some of the guys on the course went on to work in restaurants. A couple ended up back inside. It's hard to change when you've been in and out of prison all your life. Gordon gave us a chance to show we were willing. But not everybody gets the chance that I've been given. I'm lucky I've got the support I need to keep this up, and now I'm determined to put my experience to good use to help others who've been through it like me.

Post-prison, Kelly has worked with prisoner peer-mentoring charity the St Giles Trust and done a stint as an actor at the Theatre Royal in Plymouth. Currently, he is undertaking training, supported by Anchor House, to become a "lifestyle architect", a sort of life coach-cum-counsellor for those struggling with troubled and troublesome lives. In the meantime, Brixton's Bad Boys' Bakery continues to thrive. Our conversation at an end, Kelly and I shake hands and I wish him luck.
